Banana Muffins – A Recipe To Go Bananas About!

So, this definitely isn’t a post about knitting, but that’s okay. I love cooking too and, in turn, love sharing recipes, especially ones that have made it in my family’s favorite list.

When my husband and I got married, I asked everyone who came to my bridal shower to bring their favorite recipe with them on a recipe card to help me bulk up my collection. Wow, did I get some really good ones! This banana muffin recipe was given to me by my husband’s aunt. This is by far one of my kids’ favorites. They’ll actually save some bananas back from the bunch so we have enough to make a batch of these muffins. Here’s a hint…we love to double this recipe!! They freeze well, but they never last long enough in our house to make it to the freezer! I hope you all enjoy this recipe as much as we have!

Recipe:

3 large bananas
3/4 cup white sugar
1 slightly beaten egg
1/3 cup melted butter
1 tsp baking powder
1 tsp baking soda
1-1/2 cup flour

Mash bananas. Add sugar, slightly beaten egg, and melted butter. Mix dried ingredients in separate bowl and slowly mix into wet. Fill cups 3/4 full and bake at 375 for about 18 min. Supposed to make 18 muffins…I usually get 13 or 14. Enjoy!
